Many creationists define evolution as anything that contradicts with their interpretation of the Bible.  Therefore when they say they oppose evolution they mean that they oppose Evolution, Astronomy, Quantum Physics, Physics, Geology, Palaeontology, Archaeology etc.

Too destroy all these things is their ultimate goal, however, Biological evolution is an easy target to start with because of the emotional "I'm not a monkey" reaction.  Or as one letter-to-the-editor writer put it "Evolution is goo to you via the zoo."

Creationism must be the biggest case of mass phobia in the world.  In this case it is Pithecophobia.
