  Have you looked at Mechanical Design in Organisms by S.A. Wainwright,
W.D. Biggs, J.D. Currey and J.M. Gosline (1976, Edward Arnold publishers)?
It's kind of old but it has a section on the structure, types and properties
of keratin.  It also has a bunch of references.  If you come up with anything
more recent, I'd be interested in hearing about it.   Alan Cutler
