Graphic logs

Could anybody advise me of a software package which I can use to 
generate computer versions of my field logs. I have tried scanning the 
originals and found several problems with this method. Ideally, I would
like to end up with a series of simple logs which include my own 
symbols for different faunal species and space for additional 
information such as colour, sed. structures etc.
