Not much on eggs, but a lot on bones and invertebrates:
Skeletal Biomineralization: Patterns, Processes, and Trends. J. G. 
Carter (ED.). 1990. Van Nostrand Reinhold.  Unfortunately, the 
publisher evaded the price limiting agreement by transferring the text 
to another division.
