Respec to to the question of iron minerals, the animals could deposite such minerals in their skeletons. However a lot of organic pigments have some metallic atoms in their structure.
In haemoglobin, the four haem rings have an atom of iron each. Haemocyanin has cooper. These respiratoy pigments rarely are deposited in skeleton. However, Porphyrins do it and are present in the red pattern of the shells of some molluscs. In other animals (i.e. echinods) calcite structures with porphyrins shows pink or reddish colour under UV.
After dacay, these metallic atoms could nucleate for some crystals.
